Meatloaf Mash Potato Cupcakes. Paula Deens recipe.

Cupcake Meatloaf with Mash Potato Frosting and Bacon Sprinkles.

 
 
I based this recipe off of  Paula Deen's recipe, but I changed it up to suit my families taste buds. Here is the link to Paula Deen's Old Fashion Meat Loaf.
 
This was the first time that I've ever made meatloaf. I'm so impressed with how fast, easy, and loved it was. My kids normally do not approve of my cooking, but they loved this recipe. Ingredients
  • 1 pound ground beef
  • 1 1/4 teaspoons salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup chopped onion
  • 1 egg, lightly beaten
  • 8 ounces canned diced tomatoes without juice (Drained)
  • 1/4 cup bread crumbs (we used Italian but plain would work too)
Topping:
  • 1/3 cup ketchup
  • 2 1/2 tablespoons brown sugar
  • 1 tablespoon mustard
EXTRA:
  • Mash Potatoes
  • Bacon Bits
Directions:
Preheat oven to 400 degrees F.
Mix all meatloaf ingredients well and place in Pam sprayed cupcake pan. Makes 12 cupcakes.
Topping:
Mix ingredients for topping and spread over each cupcake. Bake for 24 minutes.
 
 
While it's cooking whip up some mash potatoes & place in icing bag (cut tip of bag).  Once you take the cupcakes out of the oven put 2 cupcakes on each dinner plate, ice the meatloaf with the mash potatoes, and sprinkle bacon bits on top for the cutest dinner cupcake.
